Chicken Fajitas

This one is super simple! Today I didn’t have lots of time to cook, so I decided to go for something quick that required minimum prep. Done under an hour and super tasty? Hell, yeah.

Ingredients:

  • 2 boneless, skinless chicken breasts cut into thin strips. Alternatively, you can buy the already sliced chicken breast to use, if you’re in a rush.
  • Salt and pepper to season the chicken breasts
  • 1 tablespoon of extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, julienned
  • 1 green pepper, julienned
  • 1 sweet red or yellow pepper, julienned
  • 1-1/2 teaspoons seasoned salt**
  • 1-1/2 teaspoons dried oregano**
  • 1-1/2 teaspoons ground cumin**
  • 1 teaspoon garlic powder**
  • 1/2 teaspoon chili powder**
  • 1/2 teaspoon paprika**
  • 1/2 teaspoon crushed red pepper flakes, optional**

Optional: whole wheat tortillas, lettuce, shredded cheddar cheese, pico de gallo, guacamole, sour cream, or hot sauces.

**Because I did not have time to mix all my spices, I just used Epicure’s Fajita Seasoning. I do not sell Epicure or am in any way affiliated with the company, but if you are interested in purchasing any items that I may mention, I can forward you the contact of my consultant!

Directions:

1. Cut the chicken breast into thin slices (or buy pre-sliced) and season with salt and pepper. Put aside.

2. Mix all the spices together in a small side dish and put aside.

3. In heated up large skillet, add the olive oil and saute the onions until they start to “sweat” a bit under medium heat. Once the onions have softened a bit, add the minced garlic and saute for one more minute.

4. Add the julienned peppers and continue to cook, while stirring often, until crisp-tender. Remove and keep warm.

5. In the same skillet cook the seasoned chicken slices over medium-high heat for 5-6 minutes or until no longer pink.

6. Return the peppers and onions to the skillet and add the spice mixture. Cook for another minute while mixing in the spices. Alternatively, you can use about 1 tablespoon of Epicure’s Fajita Seasoning.

7. Spoon filling down the center of tortillas or lettuce (or both!) and serve with toppings as desired. Myself? I like a little bit of spice, so I used my absolute favorite hot sauce – Cholula!

And that’s it! So simple!
